Been thinking about this a lot and I realize that what I really want is to run a couple of specific campaign, in the same general vein as the Spelljammer Academy mini-campaign I did, and for some of those the systems are clear, others not so much.
Two that are clear:
Southern Reaches - open table Brancalonia (5e Mod - Gritty Realism, E6, non-lethal brawling) with its general ‘genial knaves’ atmosphere
Abyssal Thunder Run - Band of Blades mashed with Alexandrians Avernus hex-crawl, In The Abyss from Planescape
Further down-range have two other things I want to run (based on getting books I’ve kickstarted to the table) where I don’t know what the system to use would be:
Ultimate Steppes Campaign - bringing to table Ultraviolet Grasslands + Metis Creative’s catalogue - City of the Crescent, Empires of the Silk Road and Wayfarer Nomadic Realms + Fateforge Great Kaan. Not sure what the system for this could be, UVG SEACAT is basically a retro-clone, all the books are keyed to 5e - maybe Fateforge (another 5e mod)?
“Your Sector, Your Problem” - keeping a star sector from burning down; deploy assets on a sector map then go yourselves to deal with whatever problem you think merits your direct involvement. Run with maybe Ashen Stars (GUMSHOE)? Kingdoms & Warfare/ Stronghold & Followers ‘follower’ rules to reflect sector defence assets? Star Wars d6 was mentioned for this, I haven’t got a chance to check that out yet.
Still the best incarnation of Star Wars. Worth checking out.
Whats my fastest on-ramp to that system - minimum books needed to grok it?

Rulebook’s enough. Revised or whatever it’s called if you can get it, original is fine, too.
